First off get
Audiobus and
AudioShare, that's the baseline for music making on the ipad.
Bold items are my favorites.
Modular:
Audulus 3 (nothing else gets close to it, so not even going to bother listing them)
Synths:
Moog Model 15
Animoog
iMS-20
Cyclop (noise and glitch heaven)
Samplers:
Samplr
Blocs Wave
Sample Manipulation:
Sector
Borderlands (great for ambient)
iDensity
Soundscaper (glitch, ambient, everything, it's incredibly complex and engrossing)
Drums/grooveboxes:
Patterning (bar none the best drum app on iOS, sample based, can do really complex rhythms really easily)
Egoist (strays between sample manipulation and groove box, I love it to death)
iMPC Pro (if you like that sort of thing)
Effects:
Turnado
Flux:FX
Effectrix (sequenced effects, great for drums)
The Klevgrand Effects suit
AUFX 4
Music Utilities:
Chord! (make sure it's the one by THomas Grapperson, it's the best guitar songwriting tool I've used)
Tempo Advance (crazy metronome)
Tunable (fantastic tunner)
AUM (you won't need this until you have an eternal keyboard maybe, but it makes recording complex sounds a lot easier.)
Recording/sequencing:
Cubasis (a full daw, everything you really need)
Loopy (fantastic looper for getting ideas down)
Modstep (ios midi sequencer, is always improving by leaps and bounds)
garaband/music memos (you have them already, they are actually good)
Fugue machine (does what it says, makes your one melody into a fugue, really good for getting new ideas)
Gadget (an all in all music sketch took by Korg, highly recommend it, although not for everyone)
Fieldscaper (It's a real time version of soundscaper. Meant for field recordings but is amazing for guitar. Super inspirational, it's the closest thing to having an anti nautilus.)
Standard sounds (pianos and shit):

Korg Module
Don't bother with the BIas series, their business model is absolute garbage.
I probably missed a bunch of great apps, but this is just off the top of my head.
